Mexican Muffins

  1. Sift the flour, baking powder and spices into a bowl.
  2. Combine the milk, oil and eggs and stir into dry ingredients until smooth.
  3. Add the remaining ingredients to the batter and mix until just combined.
  4. Spoon mixture into 12 lightly greased 1/2 cup capacity muffin pans.
  5. Bake in oven at 200C for 15-20 minutes or until golden brown and cooked through.
