Mexican Muffins
- 2 cups self raising flour
- 1 teaspoon baking powder
- 1/4 teaspoon cumin
- 1/4 teaspoon coriander
- 1 cup milk
- 1/3 cup oil
- 2 eggs
- 310g can corn kernels, drained
- 1 packet corn chips, crushed
- 1 small red capsicum, diced
- 1/2 red onion, finely chopped
- 5 KRAFT Singles, diced Target 2 For $5.00 thru 02/06
- Sift the flour, baking powder and spices into a bowl.
- Combine the milk, oil and eggs and stir into dry ingredients until smooth.
- Add the remaining ingredients to the batter and mix until just combined.
- Spoon mixture into 12 lightly greased 1/2 cup capacity muffin pans.
- Bake in oven at 200C for 15-20 minutes or until golden brown and cooked through.
