Scrumptious Cheesy-Veggie-Bacon Potatoes

  1. Pour both bags of Simply Potatoes into a large mixing bowl.
  2. Brown the bacon until cooked and crisp, chop and set aside.
  3. Briefly saute the green onions, red bell pepper, and carrots in the 1 Tbs of oil.
  4. Add the bacon, green onions, red bell pepper, and carrots to the potatoes.
  5. Add the salt and pepper to the potato mix and stir completely together.
  6. Then add the sour cream, shredded cheese, and mushroom soup to the potato mixture and stir together.
  7. Finally, add 3/4 cup melted butter and completely mix all ingredients thoroughly.
  8. In a 10 x 15 inch pan, spoon the potato mixture in and even it out.
  9. In a separate bowl, add the crushed cornflakes and 1/4 cup melted butter and mix thoroughly.
  10. Layer the cornflake/butter mixture on top of the potato mixture.
  11. Bake 1 hour at 350 degrees and serve immediately!
  12. Enjoy!
