Scrumptious Cheesy-Veggie-Bacon Potatoes
- 2 (20 ounce) packages Simply Potatoes Diced Potatoes with Onion
- 5 ounces bacon, cooked and chopped
- 2 cups shredded carrots
- 14 cup green onion, diced
- 2 cups red bell peppers, diced
- 1 tablespoon oil
- 16 ounces sour cream
- 1 (15 ounce) can cream of mushroom soup
- 2 cups shredded sharp cheddar cheese
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup melted butter (3/4 cup and 1/4 cup used in recipe)
- 2 cups corn flakes, crushed
- Pour both bags of Simply Potatoes into a large mixing bowl.
- Brown the bacon until cooked and crisp, chop and set aside.
- Briefly saute the green onions, red bell pepper, and carrots in the 1 Tbs of oil.
- Add the bacon, green onions, red bell pepper, and carrots to the potatoes.
- Add the salt and pepper to the potato mix and stir completely together.
- Then add the sour cream, shredded cheese, and mushroom soup to the potato mixture and stir together.
- Finally, add 3/4 cup melted butter and completely mix all ingredients thoroughly.
- In a 10 x 15 inch pan, spoon the potato mixture in and even it out.
- In a separate bowl, add the crushed cornflakes and 1/4 cup melted butter and mix thoroughly.
- Layer the cornflake/butter mixture on top of the potato mixture.
- Bake 1 hour at 350 degrees and serve immediately!
