Effies Fassoulada

  1. Heat the oil in a heavy, 6-quart saucepan or Dutch oven.
  2. Add the onions and garlic and saute until golden, stirring constantly, about 5 minutes.
  3. Stir in the water, tomatoes, beans, and pepper.
  4. Bring to a boil over high heat; reduce heat to low, cover, and simmer 1/2 hours.
  5. Add the mint and salt; simmer 15 minutes longer or until beans are tender.
