Tropical Noodle Toss With Crab and Mango
- 12 cup chopped fresh mango
- 1 tablespoon diced shallot
- 1 tablespoon minced fresh ginger
- 1 tablespoon fresh lime juice
- 1 teaspoon sugar
- 1 teaspoon fish sauce
- 1 teaspoon sriracha sauce
- 1 bunch asparagus, cut into 3-inch pieces
- 1 (7 ounce) package fresh udon noodles or 1 (7 ounce) package soba noodles
- 34 cup cubed fresh mango
- 12 cup matchstick-cut carrot
- 14 cup thinly sliced shallot
- 1 cup lump crabmeat (8 oz.)
- Place dressing ingredients in a blender or food processor; process until mostly smooth; set aside.
- Bring a large saucepan of water to a boil; add asparagus; simmer 2 minutes.
- Add noodles to same pan with asparagus and gently break up noodles with a spoon; simmer 1-2 minutes.
- Drain noodles and asparagus; rinse with cold water, and set aside.
- Combine 3/4 Celsius cubed mango, carrots, and 1/4 cup shallots in a large bowl.
- Add noodles and asparagus.
- Drizzle with half the mango dressing; add crab, and toss gently to coat.
- Add more dressing, if desired; taste for seasoning and adjust w/ salt and pepper, if desired.
- Divide noodle mixture among 4 plates; serve immediately.
