Chocolate Caramels

  1. Cut chocolate in small pieces.
  2. Add sugar, butter, salt, syrup, and cream.
  3. Cover and boil 5 minutes.
  4. Uncover.
  5. Boil slowly, stirring constantly, to firm ball stage (248F).
  6. Remove from fire.
  7. Add flavoring and stir until well blended.
  8. Pour quickly over nuts which have been placed in well-buttered pan.
  9. When cool cut in squares.
