Cabbage Capsicum Pickle Recipe

  1. Slice cabbage.
  2. Put cabbage in a bowl, sprinkle with salt, and leave to stand for 30 min.
  3. Peel and cut onion into rings.
  4. Seed and cut capsicum into 0.5cm wide strips.
  5. Pack vegetables into a large jar, add in peppercorns, bayleaves and brown sugar.
  6. Fill jar half full and add in water till all the vegetables are covered.
  7. Store in the refrigerator for up to 2 weeks.
  8. Serve with cool meats, roasts or possibly grills.
