Quick Shrimp, Asparagus & Parmesan Rice Skillet
- 1 Tbsp. butter
- 1 onion, chopped
- 1/2 lb. uncooked deveined peeled medium shrimp
- 2 cups chopped fresh asparagus
- 2 tsp. lemon zest
- 1 can (14-1/2 oz.) chicken broth
- 1-1/4 cups milk
- 2 cups instant white rice, uncooked
- 1/3 cup KRAFT Grated Parmesan Cheese
- Melt butter in large skillet on medium heat.
- Add onions; cook and stir 3 to 5 min.
- or until crisp-tender.
- Add shrimp, asparagus and lemon zest; cook and stir 5 min.
- or until asparagus is crisp-tender and shrimp turn pink.
- Add broth and milk; stir.
- Bring to boil.
- Stir in rice; simmer on medium-low heat 5 min.
- Remove from heat.
- Stir in cheese; cover.
- Let stand 5 min.
