Peach Margaritas With Peach Wedges

  1. Prepare an ice-water bath.
  2. Bring a medium pot of water to a boil.
  3. Add 1 pound of peaches, and cook for 1 minute.
  4. Transfer to ice-water bath to cool.
  5. Remover peaches from water.
  6. Peel and halve peaches, and remove pits.
  7. Slice peaches into wedges, and transfer to a medium bowl.
  8. Toss with orange liqueur, sugar and salt.
  9. Cover, and set in a warm spot until peaches give off juice, about 20 minutes.
  10. Puree peach mixture in a blender or a food processor until completely smooth.
  11. Immediately stir in tequila and lemon juice.
  12. (Peach puree with tequila can be refrigerated, covered, for up to 4 hours).
  13. Transfer to a pitcher, and stir in peach nectar.
  14. Fill each of 8 tall glasses with ice, and garnish with a sprig of mint.
  15. Cut the remaining 2 peaches into 8 wedges, cut a small slit into curve of each wedge, and place one wedge on rim of each glass.
  16. Divide margarita mixture among glasses.
