Creamy Wheat Berry Hot Cereal

  1. Place oats, raisins, milk (or soymilk) and salt in a large, microwave-safe bowl.
  2. (No microwave?

  4. Stir to combine.
  5. Microwave on High, uncovered, for 3 minutes.
  6. Stir in cooked wheat berries and microwave again until hot, 1 to 2 minutes more.
  7. Let stand for 1 minute.
  8. Stir in brown sugar and cinnamon.
  9. Sprinkle with toasted almonds and serve.
  10. Stovetop Variation:
  11. Bring milk (or soymilk) to a boil in a medium saucepan over medium-high heat.
  12. Stir in oats, raisins and salt.
  13. Reduce heat to low, cover, and cook for 3 minutes.
  14. Stir in cooked wheat berries and cook until heated through, about 1 minute more.
  15. Remove from the heat.
  16. Stir in brown sugar and cinnamon; let stand for 1 minute.
  17. Sprinkle with toasted almonds and serve.
  18. For the wheat berries:
  19. Sort through wheat berries carefully, discarding any stones.
  20. Rinse well under cool running water.
  21. Place in a large heavy saucepan.
  22. Add water and salt.
  23. Bring to a boil over high heat, then reduce heat, cover, and simmer gently for 1 hour, stirring occasionally.
  24. Drain and rinse.
  25. To serve hot, use immediately.
  26. Otherwise, follow the make-ahead instructions.
