Falafel Pita Sandwiches

  1. Combine all falafel ingredients except the baking soda, flour, and canola oil, in the food processor.
  2. Blend until fine, and completely combined.
  3. Remove falafel mixture and place in a small bowl.
  4. Add baking soda and flour and mix well.
  5. Form the falafel mixture into balls about 1 inch in diameter.
  6. Heat canola oil in a large pot on the stove.
  7. Deep fry each piece of falafel until browned, about 2 minutes.
  8. Remove and set aside.
  9. For the tzatziki sauce, place all ingredients in a small bowl and combine.
  10. To assemble the pitas, cut off the top of each pita to form an opening.
  11. Spread hummus inside the pita then fill with falafel, tomato, and lettuce.
  12. Top with tzatziki sauce.
  13. Enjoy!
