Falafel Pita Sandwiches
- 15 ounces, weight Chickpeas
- 1/2 whole Onion
- 1 teaspoon Coriander Seeds, Toasted And Ground
- 1 teaspoon Cumin Seeds, Toasted And Ground
- 4 cloves Garlic
- 1/4 cups Parsley
- 1/2 teaspoons Cayenne Pepper
- 1 teaspoon Salt
- 1 Tablespoon Lemon Juice
- 1/2 teaspoons Baking Soda
- 6 Tablespoons Flour
- Canola Oil, For Frying
- 1/2 whole Cucumber, Diced
- 1 teaspoon Lemon Juice
- 3 Tablespoons Greek Yogurt
- 1 Tablespoon Mayonnaise
- 1/4 teaspoons Salt
- 2 whole Pitas
- 1/4 cups Hummus
- 1/2 whole Small Tomato, Diced
- 1/4 cups Lettuce Chopped
- Combine all falafel ingredients except the baking soda, flour, and canola oil, in the food processor.
- Blend until fine, and completely combined.
- Remove falafel mixture and place in a small bowl.
- Add baking soda and flour and mix well.
- Form the falafel mixture into balls about 1 inch in diameter.
- Heat canola oil in a large pot on the stove.
- Deep fry each piece of falafel until browned, about 2 minutes.
- Remove and set aside.
- For the tzatziki sauce, place all ingredients in a small bowl and combine.
- To assemble the pitas, cut off the top of each pita to form an opening.
- Spread hummus inside the pita then fill with falafel, tomato, and lettuce.
- Top with tzatziki sauce.
- Enjoy!
