Cajun Smothered Corn Recipe
- 3 x Strips bacon, cut in 1/2" pcs
- 1 c. Onion, finely minced
- 1 sm Red bell pepper, seeded and chopped
- 1 x Rib celery, finely chopped
- 2 med Cloves garlic, peeled and chopped
- 4 c. Frzn corn kernels, thawed
- 1 c. Canned tomatoes, broken up
- 3/4 tsp Paprika
- 1 tsp Dry basil, crushed
- 1/4 tsp Dry thyme, crushed
- 1/4 tsp Grnd red, (cayenne) pepper
- 1/2 tsp Salt Freshly grnd pepper to taste
- 1 Tbsp. Lime juice
- Put bacon into saucepan, set over medium heat and fry till crisp.
- Remove the bacon with a slotted spoon to a paper towel-lined plate.
- Crumble bacon; set aside.
- Add in onion, bell pepper, celery and garlic to pan.
- Saute/fry 3 min.
- Cover pan; cook 5 min.
- Add in corn, tomatoes, paprika, basil, thyme, cayenne, salt and pepper.
- Cook over medium heat, stirring often, for 5 min or possibly till corn is heated through and flavors have blended.
- Add in bacon and lime juice.
- Stir 1 minute; serve.
