Winter Squash Soup

  1. In 3-quart saucepan over medium heat, in hot salad oil, cook onion and ginger 1 minute.
  2. Stir in frozen pureed winter squash, chicken broth, pear nectar, and salt.
  3. Over medium-high heat, heat to boiling, stirring frequently.
  4. Reduce heat to low; cover and simmer 10 minutes.
  5. Garnish with chopped parsley.
