Winter Squash Soup
- 1 tsp. salad oil
- 1 tbsp. finely grated onion
- 1 tbsp. finely grated peeled gingerroot
- 2 package pureed winter squash
- 1 can chicken broth
- 1 can pear or peach nectar
- 1/4 tsp. salt
- Chopped parsley for garnish
- In 3-quart saucepan over medium heat, in hot salad oil, cook onion and ginger 1 minute.
- Stir in frozen pureed winter squash, chicken broth, pear nectar, and salt.
- Over medium-high heat, heat to boiling, stirring frequently.
- Reduce heat to low; cover and simmer 10 minutes.
- Garnish with chopped parsley.
