Vickys Jerk Beef Stew
- 1 tbsp oil
- 1 tbsp cornflour / cornstarch
- 750 grams diced stewing beef
- 400 ml beef stock
- 400 grams can of chopped tomatoes
- 2 red bell peppers, diced
- 2 yellow peppers, diced
- 1 onion, chopped
- 200 grams baby button mushrooms, quartered
- 200 grams green beans cut into 2" pieces
- 2 tbsp Jerk seasoning (or to taste)
- 1 tbsp garlic puree
- to taste salt & ground black pepper
- Preheat the oven to gas 3 / 160C / 325F
- Heat the oil in a frying pan and lightly brown the diced beef
- Drain the beef then transfer to a large casserole dish
- Stir in the rest of the ingredients then put the lid on the dish and put in the oven for 2.5 - 3 hours
- Stir again then season to taste.
- You may like to add more Jerk seasoning or some black pepper
- Nice served with some coconut rice - see my Jerk Chicken recipe for ingredients and instructions or with some healthy cauliflower rice as pictured
