Smashed Chickpea and Pesto Sandwich

  1. Drain and rinse the chickpeas.
  2. Lay them out on a paper towel and pat dry.
  3. Remove the papery skins if desired.
  4. Transfer them to a bowl and smash with 2 forks.
  5. Add the parsley, pesto, red pepper, onion, lime zest and lime juice.
  6. Add salt and pepper to taste.
  7. Serve on sandwich bread, or as a dip with veggies, tortilla chips, etc.
