Smashed Chickpea and Pesto Sandwich
- 1 can (15 Oz. Size) Garbanzo Beans
- 1/4 cups Flat-leaf Parsley, Chopped
- 2 Tablespoons Pesto (store Bought Or Homemade)
- 2 Tablespoons Red Bell Pepper, Finely Chopped
- 1 Tablespoon Onion, finely chopped
- 1 whole Lime, Zest And Juice
- 1/2 whole Lemon, Juiced
- Salt And Pepper, to taste
- 8 slices Bread, To Serve
- Drain and rinse the chickpeas.
- Lay them out on a paper towel and pat dry.
- Remove the papery skins if desired.
- Transfer them to a bowl and smash with 2 forks.
- Add the parsley, pesto, red pepper, onion, lime zest and lime juice.
- Add salt and pepper to taste.
- Serve on sandwich bread, or as a dip with veggies, tortilla chips, etc.
