Shrimp Curry
- 1 lb shrimp, shelled
- 3 tablespoons butter
- 1 small onion
- 1 12 teaspoons curry powder
- 14 cup flour
- 12 teaspoon salt
- 1 cup milk
- 12 cup chicken broth
- 18 teaspoon ginger powder
- 1 teaspoon lemon juice
- 34 teaspoon sugar
- 3 cups cooked rice
- 12 cup salted peanuts
- 12 cup golden raisin
- - chop the onion;.
- - melt butter over medium heat.
- - add onions and cook until tender.
- - stir in curry powder and cook for about 1 minute.
- - stir in flour, ginger, sugar and salt.
- - gradually add in milk and chicken broth, simmer/stir until the sauce gets thicker.
- - stir in shrimp and lemon juice and simmer until everything is heated.
- - pour over the cooked rice and sprinkle the top with the peanuts and raisins.
