Bibingka
- 1/2 cup butter, softened
- 1 lb sweet rice flour
- 2 1/2 cup sugar
- 1 tsp. baking powder
- 3 cups milk (fresh or evaporated)
- 5 eggs, beaten
- 1 tsp. vanilla
- 1 cup coconut flakes
- Preheat oven to 350 F. Mix all ingredients in a greased 13 x 9 pan.
- Bake 1 hour at 350F, or until a toothpick inserted in the center comes out clean.
- When cool, cut into squares.
