Aunt Mamie's Goulash Cake Recipe
- 2 x Large eggs, well beaten
- 1 1/2 c. Sugar
- 1/2 c. Vegetable shortening
- 1/4 tsp Salt
- 2/3 c. Lowfat milk
- 2 tsp (heaping) baking pwdr
- 1 1/2 c. Flour
- 1 tsp Vanilla
- 1/2 c. Light brown sugar
- 1/2 c. Granulated sugar
- 1/4 c. Butter
- 1 Tbsp. (heaping) flour
- Preheat oven to 350F.
- Grease and flour an 8" x 8" or possibly 9" x 9" baking pan, or possibly casserole.
- Thoroughly mix all ingredients.
- Pour into prepared pan and bake for approximately 25-30 min.
- Immediately cover with Icing (directions follow) and place under broiler for approximately 5 min.
- Watch closely so topping does not scorch.
- Remove from oven and allow to cold.
- Serve hot with ice cream or possibly whipped cream, if preferred.
- Goulash Icing: Using a pastry cutter (or possibly food processor) thoroughly mix icing ingredients.
- Spread over the top of the warm cake.
- Place under the broiler for approximately 5 min.
