Pickled Red Onions
- 2-1/4 qt. red wine vinegar
- 3 cups red wine
- 3 cups KRAFT FREE Raspberry Vinaigrette Fat Free Dressing
- 3 cups sugar
- 1 Tbsp. celery seed
- 6 each bay leaves
- 3 each red onions, cut lengthwise in half, then crosswise into thin slices
- Combine all ingredients except onions in sauce pot.
- Bring just to simmer on medium heat.
- Remove from heat.
- Strain through a fine-mesh sieve.
- Discard strained pieces.
- Pour strained liquid over onions in non-reactive bowl; cover with plastic wrap.
- Cool completely, then firmly press wrap onto surface of onions; refrigerate overnight.
