Pickled Red Onions

  1. Combine all ingredients except onions in sauce pot.
  2. Bring just to simmer on medium heat.
  3. Remove from heat.
  4. Strain through a fine-mesh sieve.
  5. Discard strained pieces.
  6. Pour strained liquid over onions in non-reactive bowl; cover with plastic wrap.
  7. Cool completely, then firmly press wrap onto surface of onions; refrigerate overnight.
