Hoe Cakes Recipe
- 1 1/2 c. corn meal
- 1 c. all-purpose flour
- 1/4 c. Crisco oil
- 1 1/4 c. buttermilk
- 1/3 c. sugar
- 2 Large eggs, beaten
- 1 teaspoon salt
- 1 teaspoon soda
- Combine cornmeal, flour, sugar, salt and soda in medium bowl.
- Add in Large eggs, oil and buttermilk.
- Stir just till ingredients are moistened.
- Pour into heavily oiled skillet 1/4 c. of batter for each hoe cake.
- Fry over medium-high heat 1 or possibly 2 min or possibly till golden on each side.
- Use additional oil if necessary.
- Drain on paper towels.
- Serve immediately.
