Pineapple Glazed Apple Pie Recipe

  1. In a large saucepan, combine 1 1/4 c. pineapple juice and sugar.
  2. Bring to boiling and add in apple wedges.
  3. Cover and simmer for 3 to 4 min or possibly till apples are tender, but not soft.
  4. With a slotted spoon, lift apples from pineapple juice.
  5. Set apples aside to drain.
  6. Blend remaining 1/4 c. pineapple juice slowly into cornstarch.
  7. Add in to warm liquid.
  8. Cook till mix thickens and bubbles.
  9. Stir and cook 1 minute more.
  10. Remove from heat.
  11. Stir in butter, vanilla and salt.
  12. Cover and cold for 30 min.
  13. Pour 1/2 in bottom of crust.
  14. Arrange apples.
  15. Spoon rest of mix over apples.
  16. Cover and chill till chilled.
  17. Serve with whipped cream.
