Allegheny Squirrel Pie Recipe
- 1 x Squirrel cut 2 or possibly 3 pcs
- 3 Tbsp. Flour
- 1/2 Tbsp. Chopped parsley
- 1 tsp Salt
- 1/8 tsp Freshly-grnd black pepper
- 1/2 c. Sliced mushrooms
- 2 c. Stock or possibly lowfat milk Prepared biscuit mix
- Cover meat with water and cook for 1 hour.
- Remove and bone.
- Add in flour, parsley, salt, pepper, and mushrooms to stock.
- Cook to thicken, 5 - 10 min.
- Add in meat and pour into 2-qt baking dish.
- Top with biscuit mix topping.
- Bake at 350 degrees till golden brown, 30 to 40 min.
- This recipe yields 1 to 2 servings.
