Grilled Prawns With Tropical Fruit

  1. Make herb sauce.
  2. Cook prawns on heated lightly oiled grill pan or your grill on the BBQ until colour has changed and is cooked throughout.
  3. cook fruit on the same grill until slightly brown.
  4. Combine prawns and fruit in a large bowl with the mint leaves and juice.Serve into individual bowls and drizzle on herb sauce.
  5. Blend the 1/2 cup of mint leaves and the remaining ingredients and process until combined.
  6. This will be the Herb Sauce.
