Smoked Salmon Rolls
- 1 Tablespoon Neufchatel Cheese
- 1 Tablespoon Lowfat Sour Cream
- 1 teaspoon Lemon Juice
- 1 dash Pepper
- 1 whole Scallion, Minced
- 1 teaspoon Capers, Rinsed, Minced Fine
- 1 teaspoon Minced Fresh Chives
- 9 whole Slices Smoked Salmon, Halved Into 18 Long Slices
- 18 whole Small, Lettuce Leaves Of Choice
- Mix together all ingredients except smoked salmon and lettuce leaves.
- Combine well and set aside.
- Spread 1 teaspoon of mixture over each salmon slice.
- Starting at one end, roll salmon over filling.
- Garnish with lettuce leaf.
