Rumpot Conserve
- 4 cups assorted berries (preferably 1/2 dark and 1/2 red)
- 3 cups finely chopped pitted tree fruit (such as apricots, nectarines plums or cherries)
- 6 cups sugar
- 14 cup amber rum
- Place berries in a large saucepan or Dutch oven.
- Bring to a boil over high heat then reduce heat and simmer for 3 minutes.
- Use a potato masher to crush berries then stir in tree fruit.
- Add sugar in a steady stream, stirring constantly.
- Increase heat to high and bring to a full rolling boil, stirring constantly to dissolve sugar.
- Reduce heat and boil rapidly, stirring often and reducing heat further has mixture thickens, for about 12 to 14 minutes or until mixture reaches a soft, jam like consistency.
- Test for doneness.
- Remove from heat and stir in rum.
- Skim off foam if needed.
- Ladle into prepared jars leaving a 1/4" headspace.
- Process jars in a boiling water bath for 10 minutes.
- Adjust time according to your altitude.
