Scorpion Bars Spicy Guacamole

  1. Preheat oven to 325F.
  2. Place the onion half and the jalapeno pepper in a small shallow baking dish.
  3. Drizzle with olive oil and two tablespoons of water.
  4. Sprinkle with a pinch of sugar and a pinch of salt and slow-roast for 2 hours, until soft.
  5. Combine all ingredients and gently mash together.
  6. Serve with tortilla chips.
