Cornbeef and Cabbage (NY Style)
- 1 Corned beef brisket
- 1 pkg. spice that comes with it
- 3 chicken bullion cubes
- 1/4 tsp. crushed red pepper
- 1/4 tsp. black pepper
- 1/4 tsp. dill weed
- 1/4 tsp. thyme
- 1/4 tsp. mustard seed (optional)
- 5 red potatoes halved.
- 2 small onion, cut in eighths
- 1 head cabbage
- Wash meat, place in large pot and boil gently for 1 hr.
- Drain.
- Place meat back in pot with fresh water just to cover.
- Add all spices and bullion.
- Gently boil 3 more hrs.
- Add onion and potatoes, boil 15 mins.
- Remove meat and keep warm.
- Cut stem from cabbage but Do Not Core.
- Cut into eighths, then in half.
- Add to pot.
- Cook 15 more minutes or until desired doneness.
- Slice meat against grain and serve with vegetables.
- Don't forget the Broth!
