Slow Cooked Mango BBQ Ribs
- 1 cup Low Sodium Vegetable Stock
- 1/4 cups Pure Honey
- 1/2 cups Ketchup
- 2 Tablespoons Mustard
- 1 teaspoon Black Pepper
- 1 rack Baby Back Ribs, Cut In Half To Fit In Slow Cooker
- 2 whole Mangos, Cubed
- 2 whole Shallots, Quartered
- In a bowl, add vegetable stock, honey, ketchup, mustard, and black pepper.
- Whisk together.
- Place baby back ribs into the slow cooker.
- Add cubed mango and quartered shallots.
- Pour sauce over the ribs and place lid on slow cooker.
- Cook 6 hours on low.
- There are great flavors in these ribs.
- Serve with roasted potatoes and a salad, if desired.
- It is a family favorite!
