Croque Monsieurs
- 10 slices Pullman Loaf Or Other Crusty Bread (sandwich Thickness Slices)
- 1-78 ounces, weight Clarified Butter
- 7 ounces, weight Grated Gruyere Cheese
- 1 log Saint Maure Goat Cheese, 7 Ounce Log
- For each individual sandwich, brush one side of one slice of bread with the clarified butter, cover with a handful of shredded Gruyere cheese.
- Take a second slice of bread and brush one side with the clarified butter.
- Lay the second piece, buttered facing out, on top of the cheese.
- Repeat with the remaining ingredients.
- Youll need the rest of the Gruyere in a bit so set that aside.
- Heat a frying pan with the remaining clarified butter and brown the sandwiches slowly on each side until nice and golden.
- Remove the sandwiches and place on a baking sheet.
- Continue cooking the rest of the sandwiches.
- Add butter as needed.
- Heat the broiler in your oven.
- Top each sandwich with 2-3 thin slices of Saint Maure goat cheese and another handful of the Gruyere cheese.
- Broil in the oven for approximately 5 minutes (keep a close eye on the sandwiches as they have a tendency to burn quickly).
