Crockpot Swiss Steak

  1. Trim fat from meat and cut into 4 serving size pieces.
  2. Brown meat in a skillet with hot oil.
  3. In a slow cooker place onion, celery and carrot.
  4. Sprinkle with thyme, quick tapioca, salt, and pepper.
  5. Pour undrained tomatoes over veggies.
  6. Add meat.
  7. Cover and cook on medium heat for 6 to 7 hours.
  8. Serve with rice or noodles.
