Alvin's Zucchini Nut Muffins Recipe

• 3 x Large eggs
• 1 c. corn oil
• 1 Tbsp. vanilla
• 2 c. zucchini, unpeeled and shredded
• 2 c. sugar
• 2 c. flour, unsifted
• 1 Tbsp. cinnamon
• 1 1/2 tsp baking soda
• 1 1/2 tsp salt
• 1/4 tsp baking pwdr
• 1 c. nuts, minced

1. Preheat oven to 400 degrees.
2. Combine Large eggs, oil, vanilla, and zucchini.
3. Add in remaining ingredients and stir till moistened.
4. Grease muffin tins and fill 2/3 full.
5. Bake for 18 min.
