Green Beans with Radicchio

  1. Bring a large saucepan of salted water to a boil over high heat.
  2. Snap off ends of beans.
  3. Core radicchio and finely slice.
  4. Blanch beans in water until just tender, 5 to 7 minutes.
  5. Drain well and reserve pan.
  6. Return pan to medium heat and add butter.
  7. When melted, stir in radicchio and garlic.
  8. Cook, stirring occasionally, until lettuce is lightly wilted, about 3 minutes.
  9. Reduce heat to low and stir in beans.
  10. Cook, stirring occasionally, until beans are very tender, about 2 minutes.
  11. Season with lemon juice and salt and pepper to taste.
  12. Serve hot.
