Soft Caramel Popcorn
- 2 bags Microwave Popcorn, Popped According To Package Instructions, 3 Ounce Bags
- 1- 1/4 cup Brown Sugar, Firmly Packed
- 1/2 cups Light Corn Syrup
- 1/2 cups Butter
- 1 dash Salt
- 7 ounces, fluid Sweetened, Condensed Milk
- 1/2 teaspoons Pure Vanilla Extract
- *Safety: Make sure to sift out the unpopped kernels of popcorn after you pop it.
- Once youve popped the popcorn, put it into a large bowl and set aside.
- Combine in a medium sauce pan: sugar, corn syrup, butter, and salt.
- Bring to a boil, and then reduce to medium heat.
- Stir in sweetened condensed milk, and bring to a soft ball stage (you can use a candy thermometer if you have one).
- Remove from heat and stir in vanilla.
- Pour the caramel mixture over popcorn and mix and fold it in.
- You can spread it out on a sheet of wax paper to let the mixture dry a bit, if you like.
