Soft Caramel Popcorn

  1. *Safety: Make sure to sift out the unpopped kernels of popcorn after you pop it.
  2. Once youve popped the popcorn, put it into a large bowl and set aside.
  3. Combine in a medium sauce pan: sugar, corn syrup, butter, and salt.
  4. Bring to a boil, and then reduce to medium heat.
  5. Stir in sweetened condensed milk, and bring to a soft ball stage (you can use a candy thermometer if you have one).
  6. Remove from heat and stir in vanilla.
  7. Pour the caramel mixture over popcorn and mix and fold it in.
  8. You can spread it out on a sheet of wax paper to let the mixture dry a bit, if you like.
