Spinach and feta quiche
- 7 eggs
- 250 grams smooth cottage cheese
- 500 grams spinach
- 50 grams mozzarella cheese (grated)
- 250 grams cheddar cheese
- 1 packages puff pastry
- 1/8 tsp nutmeg
- Preheat oven to 360F
- Saute the spinach in a pan and set aside
- Grate the mozzarella cheese and the cheddar but keep them separate
- Whisk eggs and cottage cheese
- Add nutmeg and spinach to egg mixture
- Add cubed feta cheese
- Add mozzarella cheese to mixture and half of cheddar cheese and stir
- Grease oven proof dish and lay puff pastry
- Pour egg mixture into the oven proof dish
- Sprinkle the rest of the cheddar cheese
- Sprinkle thyme over mixture
- Add to preheated oven for 20-30 minutes.
- The quiche is ready when it's golden-yellow and when poked, there is no moisture
- Remove from oven and let it cool before serving
