Crab Ceviche Wraps
- 10 ounces, weight Crab Meat - Real (steamed) Or Imitation, Chopped
- 1 cup Celery, Diced
- 1/2 cups Red Bell Pepper, Diced
- 3 Tablespoons Sweet Onion, Minced
- 1/4 cups Olive Oil Mayonnaise
- 1 Tablespoon Rice Vinegar
- 13 teaspoons Ground Pepper
- 1/4 teaspoons Salt
- 1/2 teaspoons Garlic, Minced
- 2 Tablespoons Minced Cilantro
- 1 Tablespoon Lime Juice
- 4 whole Whole Wheat, Fiber Enriched Tortillas
- 4 leaves Lettuce, Bite Size Pieces
- In a large bowl, combine chopped crab meat, celery, bell pepper and onion.
- In a small bowl, whisk together olive oil mayo, rice vinegar, pepper, salt, garlic, cilantro and lime juice.
- Pour over the crab mixture.
- Cover and let sit in the fridge until chilled, or up to 2 hours.
- When chilled, top each of the tortillas with lettuce, spooning crab mixture over the top.
- Wrap and devour.
- Quick, simple and a healthy way to get some extra protein and fiber into a busy life.
