Low-Fat Chicken Fajitas
- 1 1/2 to 2 lb. boneless chicken breasts or ground chicken
- 1 envelope fajita seasoning
- 8 flour tortillas
- tomatoes, cut in small pieces
- grated fat free cheese
- chopped onion
- fat free sour cream
- shredded lettuce
- taco sauce
- any topping you like
- Cut chicken breasts into thin strips.
- Cook in non-stick frypan over medium heat until done.
- Drain fat.
- Add fajita seasoning as directed.
- Simmer until liquid is mostly absorbed.
- While chicken is simmering, stack flour tortillas one at a time, separated by wax paper.
- (If lightly brushed with margarine, they hold together better when fajita is made.)
- When chicken is done, heat tortillas in microwave approximately 30 seconds, turning 1/4 turn every 10 seconds.
- Place tortilla in plate.
- Place chicken down center (not too much) and top as desired.
