Zesty Meatballs and Rice
- 1 lb. lean ground beef King Sooper's 1 lb For $3.99 thru 02/09
- 1/2 pouch (1/4 of 152-g pkg.) Shake'N Bake Extra Crispy Original Coating Mix
- 1 cup finely grated carrot Target 2 lb For $3.00 thru 02/06
- 1/2 cup Cracker Barrel Shredded Mozza-Cheddar Cheese
- 1/4 cup Kraft Catalina Dressing
- 2 Tbsp. soy sauce
- 1-1/4 cups water
- 1-1/2 cups instant white rice, uncooked
- Mix meat, coating mix, carrots and cheese.
- Shape into 16 balls.
- Cook meatballs in large nonstick skillet on medium-high heat 8 min.
- or until browned.
- Add dressing, soy sauce, water and rice.
- Bring to boil; simmer 1 min.
- Cover.
- Remove from heat; let stand 5 min.
- or until rice has absorbed liquid.
