Latkes/Bleenies
- 5 boiling potatoes
- 1 small yellow onion, peeled
- 2 large eggs, lightly beaten
- 3 tablespoons matzo meal or 3 tablespoons flour
- salt
- pepper
- Grate the potatoes and onion.
- Place between paper towels and squeeze to remove excess moisture.
- Transfer to fresh towels and repeat.
- Place potatoes and onion into a bowl.
- Stir in eggs and matzah meal.
- Salt and pepper to taste.
- In a large, shallow frying pan, add enough oil to make a 1/2" layer.
- Heat to medium.
- Drop spoonfuls of batter into oil.
- Fry until golden brown (about 4 mins) then flip until golden on other side (3 mins).
- Drain latkes on paper towels and serve warm with sour cream or applesauce.
