Calico Pickles

  1. Combine vegetables in a large bowl. Dissolve salt in water and pour over vegetables.
  2. Soak for 15 to 18 hours in a cool place. Drain.
  3. In a large pot, mix sugar, spices and vinegar.
  4. Bring to a boil and boil for 3 to 4 minutes.
  5. Add vegetables and simmer 5 to 7 minutes.
  6. Pack hot into jars.
  7. Process 15 minutes in water bath. Yields 8 pints.
