Beer Currant Cookies
- 1 cup flour
- 12 teaspoon baking soda
- 14 teaspoon cinnamon
- 14 teaspoon salt
- 12 cup dried currant
- 12 cup beer
- 14 cup butter
- 12 cup light brown sugar, firmly packed
- 1 egg
- 1 egg yolk
- 12 teaspoon vanilla
- Preheat oven to 350F.
- Sift flour, baking soda, cinamon and salt together and set aside.
- Heat beer in a small saucepan over medium-low heat.
- Add currants and simmer for 5 minutes.
- Cool and drain, reserving 3 tablespoons liquid.
- Beat butter, brown sugar, egg and egg yolk together until fluffy.
- Stir in flour mixture, reserved beer, and vanilla.
- Drop by teaspoonfuls 2" apart on greased baking sheets.
- Bake for 12 minutes, or until lightly browned around the edges.
