White Chocolate Cranberry Cookies

  1. Preheat oven to 375 degrees F.
  2. Using an electric mixer, beat margarine, vanilla and sugar together in a medium mixing bowl until light and fluffy.
  3. Add eggs, mixing well.
  4. Combine oats, flour, baking soda and salt in a separate mixing bowl.
  5. Add to butter mixture mixing well
  6. Stir in sweetened dried cranberries and white chocolate chunks.
  7. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  8. Bake for 10-12 minutes or until golden brown.
  9. Let cool and enjoy !
