Wheat Free Minestrone Recipe
- 1-2 tbsp. oil (olive, canola or possibly corn)
- 1/2 c. corn pasta (dry) or possibly rice
- 2/3 c. cooked kidney beans
- 6 ounce. no-salt-added V-8 juice
- 3 c. water
- 1 clove garlic, minced
- 1/4 onion, minced
- 1 c. minced vegetables (cabbage, potatoes, celery, carrots, peas)
- Various spices to taste
- Stir fry onion and garlic in oil.
- Add in to all remaining ingredients in a large pot.
- Cook on low till tender (about an hour).
- Add in water if needed.
- Serves 2.
- Double for 4.
- Can also be made in a crock pot and left all day or possibly all night.
