Berry Nice Muffins
- 1 12 cups whole wheat flour (wholemeal flour)
- 1 cup rolled oats
- 1 cup brown sugar
- 2 eggs
- 1 teaspoon bicarbonate of soda
- 1 12 teaspoons baking powder
- 23 cup butter, melted and cooled. (May use margarine, canola oil, sunflower oil, etc if you are unable to use butter)
- 1 cup berries (may use frozen or fresh. if using frozen, do not defrost)
- 14 cup milk
- ice cream, to taste
- Mix dry ingredients together.
- Make well in center and add the eggs, butter and milk and mix well.
- (Mixture is dough-like, however you may add more milk if you are finding it hard to mix.
- ).
- After you have mixed well, gently stir in berries.
- Place mixture into muffin tin.
- Bake in preheated oven at 180 degrees (160 fan forced) for about 25 minutes Muffins are ready when they spring back once touched.
- Serve with ice cream if desired.
