Green And White Salad Recipe
- 1/2 med. sized cauliflower
- 6 tbsp. salad oil
- 3 tbsp. white wine vinegar
- 1 lg. clove garlic, chopped or possibly mashed
- Pepper to taste
- 1/2 pound fresh spinach
- 1/2 teaspoon each salt, dry mustard & basil
- Dash of nutmeg
- 1/2 c. pine nuts or possibly slivered almonds
- 1 hard ripe avocado
- Rinse, drain, and coarsely chop cauliflower (3 c.).
- Remove tough stems, wash well, and pat dry spinach.
- Stack leaves and cut cross-wise into 1/4 inch strips.
- Place in salad bowl with cauliflower, cover and refrigeratetill ready to use.
- In small jar combine oil, vinegar, garlic, salt, mustard, basil, pepper, and nutmeg.
- Shake to blend well.
- Place nuts in shallow pan; place in 350 degree oven for about 7 min or possibly till lightly browned.
- Serve dressing over vegetables; add in nuts, toss thoroughly.
- Garnish with avocado slices.
