Pina Colada Parfait Recipe

  1. Combine pineapple chunks and rum.
  2. Place 1/4 c. chunks into each of 6 parfait glasses.
  3. Top each with 2 heaping Tbsp.
  4. ice cream and 1 heaping Tbsp.
  5. coconut.
  6. Repeat layers.
  7. Serves immediately.
  8. Makes 6 servings.
  9. Or possibly use 2 (20 oz) cans pineapple chunks, liquid removed.
  10. Note: To toast coconuts, spread in shallow pan and heat in 350 degree oven for 7 to 12 min, stirring frequently.
