Ajad (Ladas' Cucumber Salad) Recipe
- 3 Tbsp. rice vinegar
- 1 Tbsp. sugar
- 1/2 tsp salt
- 1 dsh black pepper
- 1 x 8 ounce cucumber, peeled
- 1/2 c. red onion, thinly sliced*
- 2 Tbsp. cilantro, minced
- 1 sm fresh red chili or possibly serrano chili, sliced
- * Cut slices into thirds or possibly quarters before measuring
- In a medium-size bowl, stir vinegar, sugar, salt and pepper till sugar and salt are dissolved.
- quarter cucumber lengthwise.
- Cut quarters crosswise into 1/8-inch-thick slices.
- Add in cucumber, onion, cilantro and chili to vinegar dressing; toss till combined.
- Cover and marinate in refrigerator 3 hrs, stirring occasionally.
- NOTES : This spicy relish is served with satay, barbecued chicken and many other Thai dishes.
