Sweet And Sour Meatballs
- 1/2 lb. ground lean beef
- 1/2 lb. bulk sausage
- 1 egg
- 1/2 c. oats, uncooked
- 1/4 c. milk
- 1 tsp. salt
- 1/4 tsp. each pepper and nutmeg
- 1 large can pineapple chunks
- 1/2 c. vinegar
- 2 Tbsp. soy sauce
- 2 Tbsp. lemon juice
- 3 Tbsp. cornstarch
- 2 Tbsp. juice from sweet pickles
- 2 carrots, sliced and parboiled
- 1 green pepper, cut in strips
- 1 small onion, sliced
- 2 or 3 stalks celery, parboiled, diagonally sliced
- Combine meat with egg and oats, milk and seasonings.
- Mix well and shape into 18 small balls.
- Roll balls in 1/3 cup flour. Brown slowly in 2 tablespoons hot shortening, turning frequently. Remove with slotted spoon.
