Easy Chunky Potato Gratin

  1. Cut the potatoes into small bite-sized pieces, and microwave for 4.5 minutes until a bamboo skewer goes through easily.
  2. Thinly slice the onion, and cut the bacon into 1 cm strips.
  3. Heat a frying pan, and add the butter.
  4. Saute the onion and bacon.
  5. Once the onion has wilted, turn off the heat.
  6. Sprinkle in the flour little by little while stirring, and mix until it's no longer floury.
  7. Turn on the heat again.
  8. Add a little milk at a time, and mix it in well after each addition.
  9. Repeat this process to break up the onions that had been stuck together with the flour.
  10. Add the potatoes and soup stock cube.
  11. Season with salt and pepper, and simmer over low heat until it thickens.
  12. Spread a little olive oil in a gratin dish, and pour Step 6 into it.
  13. Top with cheese and panko, and bake in the toaster oven until golden brown.
