Cannoli Pastries

  1. Beat cheese in a large bowl with electric mixer at medium speed until smooth.
  2. Add 1 1/2 cups powder sugar and cinnamon; beat at high speed about 3 - 4 minutes.
  3. Add feels to cheese mixture; mix well.
  4. Cover and refrigerated until ready to serve.
  5. To assemble, spoon cheese filling into pastry bag fitted with a large plain tip.
  6. Pipe about 1/4 cup filling into each Cannoli shell***
  7. Roll Cannoli in additional powder sugar to coat.
  8. Dip ends into chopped chocolate.
  9. Garnish, if desired.
  10. ***Do not make up more than 2 days ahead.
  11. Shells well become soggy.
