Cajun Jambalaya Recipe
- 3 x Chicken breast halves, skinned
- 1 Tbsp. Cajun seasoning
- 3 Tbsp. Melted butter
- 3/4 lb Fresh shrimp, peeled and deveined
- 2 Tbsp. Vegetable oil
- 1/2 lb Smoked sausage, sliced
- 1 x Green pepper, minced
- 1 x Onion, minced
- 1 Tbsp. Chopped garlic
- 1 can Tomatoes, minced (28 ounce)
- 1/2 tsp Salt
- 1/2 tsp Pepper
- 1/2 tsp Cajun seasoning
- 1 c. Long grain rice, uncooked
- 1 1/2 c. Water
- Place chicken in lightly greased baking dish.
- Sprinkle with Cajun seasoning.
- Bake uncovered at 375 degrees for 15 min.
- Drizzle melted butter over chicken and bake an additional 20 min or possibly till tender.
- Cold and coarsely shred chicken.
- Set aside.
- Saute/fry shrimp in warm oil till pink.
- Set aside.
- In a Dutch oven, saute/fry sausage till browned.
- Add in green pepper, onion and garlic.
- Saute/fry till tender.
- Add in tomatoes, salt, pepper and seasoning.
- Simmer 20 min, covered.
- Add in rice and water to Dutch oven.
- Cover and simmer 15 min.
- Uncover and cook 10 more min or possibly till rice is done.
- Stir in shrimp and chicken.
- Heat through.
- Yield: 6 servings.
