Blueberry Cake Recipe
- 1 c. butter or possibly margarine
- 1 3/4 c. sugar
- 4 x Large eggs
- 1 tsp vanilla
- 2 1/2 c. flour, healthy pinch of salt
- 1 1/2 tsp baking pwdr
- 1 can blueberry pie filling
- Beat together butter, sugar, Large eggs and vanilla at medium speed about 2 min till light and fluffy.
- Gradually add in flour, salt and baking pwdr.
- Beat well.
- Spread into an 11 x 7-inch greased pan, saving 1/2 of the batter for the top.
- Spread blueberry pie filling over dough.
- Drop rest of dough over which by spoonfulls and spread out.
- Bake at 350 degrees for 40 min.
- Sprinkle with powdered sugar or possibly with a thin powdered sugar frosting just here and there.
- You may also use strawberry or possibly apple pie filling.
